Plantae, representada por nuestro CEO Samuel López, participa en Dreams, el congreso sobre el futuro de la alimentación de Madrid Fusión que llega a Toledo el lunes 2 de diciembre, para desarrollar una jornada con ponencias, mesas redondas y talleres. Se celebrará durante todo el día en el Círculo del Arte, ubicado en la antigua iglesia de San Vicente de Toledo. El evento lo organiza “Vocento Gastronomía” y la “Consejería de Economía, Empresas y Empleo de Castilla-La Mancha”.

Dreams is a space created by Madrid Fusion 2024, being one of the most prestigious gastronomic congresses in the world, showcasing cutting-edge culinary innovations, emerging trends and exceptional talent in the food and hospitality industry. It is held annually in Madrid, Spain, and brings together top chefs, sommeliers, food critics and other culinary professionals to share knowledge, exchange ideas and inspire creativity. For the first time, it will move to Toledo.

The future of food and gastronomic territories is facing major transformations driven by global trends, technological advances and a growing awareness of sustainability and health.

This event organized in Toledo will focus on:

  • The cooks Xosé Cannas (Rest. Pepe Vieira, Pontevedra), Javier Sanz and Juan Sahuquillo (Oba, Casas Ibáñez, Albacete), Ignacio Echapresto (Sale Monclavillo, Daroca de Rioja, La Rioja); Paco Pérez (Miramar, Llançà, Girona); Iván Cerdeño (El Cigarral, Toledo).

  • Samuel López, CEO of Plantae, the artificial intelligence that optimizes irrigation systems.
  • Albert Duaigües, CEO of RawData, the 360º farmer management platform.
  • Dr. Lucía Alonso Díez, dietician and nutritionist at the Hospital Clínic in Barcelona.
  • The general director of the Alícia Foundation, Toni Massanés.
  • The Director of Sustainability and New Projects of Abadia Retuerta-Le Domaine, Fernando Lázaro and Manuel Giráldez, manager of the Casal de Armán winery.
  • To talk about product knowledge as a tool for creativity and the future of culinary learning, Dreams will feature Gabriel Bartra, Sapiens pedagogical coordinator at the Madrid Culinary Center (MACC) and content director at Bullipedia (elBullifoundation); as well as Pablo Márquez, director of gastronomy at MACC.
  • Also attending the Toledo event will be Chilean chef Francisco Cárdenas, head chef at Restaurant Kadeau** (Copenhagen, Denmark) and Alberto Segade, head waiter and head sommelier at this Danish restaurant and chosen just a few weeks ago as the best sommelier in Denmark.
